Savory Spinach Rice Breakfast Bowl

Ingredients
- 1 tablespoon olive oil or vegetable oil
- 1 small yellow onion, chopped
- 2 cups cooked white or brown rice
- 1 cup spinach or greens
- ¼ teaspoon garlic powder, or ½ teaspoon minced garlic
- ¼ teaspoon turmeric powder, optional
- ½ teaspoon salt
- Chopped fresh parsley, optional, for garnish
Method
- Heat oil in a large skillet over medium heat.
- Add onion and cook until tender, about 6-8 minutes.
- Add rice and stir for 2-3 minutes, until warmed through.
- Add spinach, garlic, turmeric and salt.
- Stir gently until the greens soften, about 3 minutes.
- Garnish with parsley and serve warm.
