Nourish PA: Quick Pickled Garlic Scapes

Garlic scapes are the long, bright green stalks that grow from garlic bulbs. They’re removed so that the plant can pour its energy into growing the healthy, tasty bulbs so common in recipes. But the scapes are delicious all on their own! They’re crunchy and mild with a pleasant garlicy-onion and herbaceous flavor.

In this quick pickled recipe, create an easy snack or topping by jarring the scapes in a simple homemade brine. Add them to salads or tacos or enjoy these zesty, verdant bites by themselves. For extra flavor, add a clove of garlic or a pinch of sugar to the vinegar brine mixture.

Ingredients

  • 1 small bunch garlic scapes, or green onions, cut into 2-inch pieces
  • 1/2 cup white vinegar, or apple cider vinegar
  • 1/2 cup water
  • 2 teaspoons salt
  • 1/2 teaspoon red pepper flakes, optional

Method

  1. Pack scapes into a clean jar with a resealable lid.
  2. Whisk together vinegar, water, salt and red pepper flakes until salt is dissolved completely.
  3. Pour mixture over scapes, ensuring they are fully submerged.
  4. Seal jar tightly, and let sit at room temperature for at least 1 hour, or overnight.
  5. Enjoy as pickles, or as a topping for salads, tacos, or bowls.
