Turnips are one of those oft-overlooked shoulder season veggies that offer a surprising amount of nutrients and versatility. In this Nourish PA side dish, they take on a bright citrus glaze made with whatever natural sweetener you have on hand, like honey or maple syrup. They turn tender and golden in the skillet, ready to serve in under a half hour.
You can easily substitute rutabaga, parsnips or carrots for the turnips in this recipe.

Ingredients
- 1 tablespoon olive oil, or vegetable oil
- 1 pound turnips, peeled and cut into 1-inch pieces
- 1/4 cup orange juice, fresh or bottled
- 1 tablespoon honey, or maple syrup, optional
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Chopped fresh parsley, optional, for garnish
Method
- Heat oil in a large skillet over medium heat. Add turnips and saute, stirring occasionally, until softened and golden-brown, about 8-10 minutes.
- Add orange juice, honey (if using) and salt. Cook, stirring occasionally, until juice reduces and glazes turnips, about 5-8 minutes.
- Transfer glazed turnips to a serving platter and garnish with black pepper and parsley.
