I have a crush on peanut butter eggs. Any brand, any size, any type. I love em. It is the best when, in the beginning of March prime real estate by the cash registers of gas stations and grocery stores fill up with various egg shaped bits of sweetness filled with coconut, vanilla cream and peanut butter. I hold off each year in anticipation of Easter Sunday. (Yes, this 26-year-old will forever hope to have a basket filled with goodies on Easter morning… even if it comes to making it myself.)
I dream of waking up to have a big peanut butter egg for breakfast. That may seem weird and maybe even gross but I think it’s unhealthfully, healthy to do. I mean, I have willpower during every opportunity to buy and eat a peanut butter egg before the actual holiday, so I indulge the day of. I’ve had many-a eggs but I have to say that the best one I’ve ever had my mamma makes. (recipe follows)
But I need to know. Does anyone else have this pb egg habit? Or any other Easter candy obsession or tradition? Like, does anyone make a peanut butter egg and jelly bean sandwich? (Just thought of that and wishing I did that.) But let’s hear from the other candy addicts.
The Final Dish: I feel kinda sick from the amount of candy that I ate over the weekend. But I’m okay with that.
My Mamma’s Peanut Butter Egg Recipe:
Makes about 60 of the best eggs you will ever have. Ever.
8oz cream cheese
2 sticks butter
3 boxes confectioner’s sugar
1 tsp salt
2 tsp. vanilla
21 oz. peanut butter (3/4 of a 28 oz size jar)
Mix all ingredients well and form into eggs. Chill at least 3 hours or overnight
Chocolate coating:
(2) 12 oz semi-sweet chocolate chips, melted
1/2 stick parafin (melt separately and stire into melted chocolate) OR thin chocolate with 3 tbl. melted shortening.
Dip eggs in parafin and place on waxed paper to harden. Refrigerate or freeze eggs until your youngest daughter comes home to gobble them up and praise you for hours about how good they are.
