Many of us already know that Eclat’s gourmet chocolates are utterly delicious and that Éclat chocolatier Christopher Curtin is always on the prowl for innovative and even tastier creations. They may have hit a gold mine with their recent development of the Good & Evil chocolate bar, as it has already received praise from Eric Ripert and Anthony Bourdain. Evidently, a long road was traveled to acquire the bar’s perfect ingredients.
In fact, Curtin and Ripert have been working on this special chocolate project for more than a year. They traveled to Peru to investigate the plantation where a rare form of Peruvian Pure Nacional cacao is growing. Besides taste, the duo also wanted to make sure the extra special crop was being harvested in an ethical manner.
So why must you get a taste of this unique cacao and where can you do it? It has a rare form of seed pods, which contain both white and dark cocoa beans, a combination that hasn’t been seen since 1916. The Good & Evil bar will make its official public debut at Salon Du Chocolat, New York’s largest chocolate show, unfolding November 9th to 11th.
