Baker Q & A: Dia Doce Reveals Details on New Downtown West Chester Storefront

Some sweet news for fans of Dia Doce Gourmet Cupcakes broke over the weekend. After months of rumors, it was confirmed that owner Thais da Silva is opening a brick and mortar store at 100 South High Street in downtown West Chester.

Dia Doce’s bright green mobile cupcake store has been a staple around Chester County for two years, appearing at farmers markets, street festivals and private events. Now, fans of the Food Network’s Cupcake Wars winner won’t have to follow the truck’s ever changing schedule to get such tasty treats like maple bacon, black magic, salted caramel or lemon basil cupcakes.

I had the opportunity to ask Thais about her new venture and she was thrilled to be able to share details with her fans.

WC Dish: What made you decide it was time to open a retail space?

Thais da Silva: We love running our truck but want to provide a space where our guests can come everyday without having to chase us down. Our shop will cater to those who want to relax for a moment at our cupcake bar, maybe taste test a few new cupcake recipes and have a cup of coffee.

WC Dish: Will the beloved green truck still be running?

Thais da Silva: Yes, in full swing! Watch our Facebook page for our weekly locations.

WC Dish: Cathey’s Coffee Bar will also in be in the shop. What can you tell us about that partnership?

Thais da Silva:  Dia Doce will be pairing with a brand new company, Cathey’s Coffee Bar, which will feature hand crafted smoothies, juices and coffee to go along with Dia Doce’s cupcakes.

Cathey Slayton is new to the scene and a very talented barista. She is also committed to sustainability and supporting local. She will be using Golden Valley Farms Coffee Roasters in West Chester and will be bring some brand new coffee blends to the scene. The shop will include constant cupcake and drink pairing recommendations. Cathey will be using the goods directly from Dia Doce’s garden as well to craft her smoothies and juices. Our garden is in Glenmoore and is completely family run by the people you may recognize selling cupcakes around the county.

WC Dish:  When can we expect the store to open?

Thais da Silva: We are hoping to have our grand opening celebration the weekend of August 15th-17th.
