Nourish PA: Ground Pork Chili

This one-pot chili recipe works every time when you’re looking for a filling meal that the whole family will love. Ground pork offers a rich, savory depth and blends beautifully with tomatoes, beans and seasoning. And, with chili, the leftovers are sometimes better than the first round!

Everyone can customize this to their liking, with fixings, sauces and more. For additional toppings, add shredded cheese, sour cream or diced avocado.

Ground Pork Chili

Ingredients

  • 1 teaspoon olive oil
  • 1 pound ground pork, ground turkey or ground chicken
  • 1 (15-ounce) can kidney beans black beans or pinto beans, drained and rinsed, or 2 cups cooked beans, drained
  • 2 (15-ounce) cans diced tomatoes
  • 1 tablespoon chili powder or ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon chopped fresh parsley, or 1 teaspoon dried parsley (optional, for garnish)

Method

  1. Heat oil in a large pot over medium heat. Add pork, and cook until browned, breaking it up as it cooks, about 5-6 minutes. Add onions, and cook until tender, about 3-4 minutes.
  2. Stir in the beans, diced tomatoes, chili powder, salt and pepper, and bring mixture to a simmer.
  3. Cook, stirring occasionally, until slightly reduced, about 10 minutes.
  4. Divide among serving bowls and garnish with parsley, if using.
