Opening This Week in Lancaster: Cabalar Meat Company (Feb. 2)

If you’ve been keeping a close eye on Cabalar Meat Company like we have, you’ll be excited to learn its grand opening is going down this Friday, February 2! Stop in and welcome Cabalar to the 300 block of North Queen Street in downtown Lancaster. Its doors will open early on Friday at 7 a.m. and stay open late until 9 p.m in celebration of “First Friday.”

“We’re excited to be on the 300 block, and everyone has been super-welcoming. We’re new to Lancaster as we’ve only been here for about a year, so we’re excited to be a part of this community,” says Lianne Cabalar, co-owner of Cabalar Meat Company.

Dry goods already line the shelves, and produce and dairy will arrive throughout the week leading up to the opening. The Cabalar team is trying to stay local as it curates its offerings. Lianne says, “We’re trying to get things that are a little bit different, like different ketchups, mustards, sauces and rubs that we think would complement our meats. If someone is looking to make a meal, they essentially can come here and get everything they need to make their dinner.”

The meat counter will offer everything from steaks to sausages, ham to pastrami, bacon to jerky and everything in between. And for all you smoked-meat-lovers out there, Cabalar has a smoker on site and isn’t afraid to use it. There will be plenty of experiments going on, when it comes to smoked meats!

Cabalar is sourcing its pasture-raised and grass-fed meats from Livengood Family Farms, Myer Springdell Farms and Mirror Image Farms, all located within Lancaster County, of course. Lianne says, “There’s no sense in going far away to source our meats with what great quality we have available so close to us.”

Cabalar Meat will have counter-service breakfast and lunch every day of the week. Breakfast will be served from 7–9:30 a.m. (during the week) and will offer sandwiches, tacos and baked goods, like muffins, cookies and tarts. Lunch will be served from 11 a.m.–2 p.m. during the week with options such as sandwiches, tacos, hot dogs and hamburgers. There will also be plenty of vegetarian sides. Beet salad and carrot salad top Lianne’s favorites. Cabalar will also be serving brunch favorites on Saturdays and Sundays from 9 a.m.–2:30 p.m. 

If you’re not able to stop in during Cabalar’s grand opening on Friday, visit the store during its regular business hours:

  • Monday through Friday: 7 a.m.–6 p.m.
  • Saturday: 8 a.m.–5 p.m.
  • Sunday: 8 a.m.–3 p.m.
