Nourish PA: Bananas 5 Ways

We’ll admit: bananas are great all by themselves. They’re a tasty snack providing all kinds of energy-boosting, appetite satiating and heart healthy nutrients in their own little grab-and-go package. But they’re also wondrous in multi-ingredient recipes, offering a uniquely soft texture and touch of sweetness to a variety of dishes.

Banana Fritters

Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup all-purpose flour, or whole wheat flour
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon salt
  • Oil or butter, for frying
  • Powdered sugar, for dusting (optional)

Method

  1. Mash the bananas in a medium bowl using a fork or potato masher until mostly smooth.
  2. Add flour, sugar, cinnamon (if using) and salt until you have a thick batter.
  3. Heat a thin layer of oil or butter in a skillet over medium heat.
  4. Drop spoonfuls of the batter into the pan and flatten slightly with the back of the spoon.
  5. Cook until golden-brown and crisp, about 2-3 minutes per side.
  6. Transfer to a paper-towel-lined plate to drain. Garnish with a dusting of powdered sugar and serve.
