Easy Appetizers: Roasted Mushroom Crostini

Warm up with these comforting apps that recall the flavors of vegetarian mushroom stroganoff, a wintertime favorite.


  • 4 ounces of mixed mushrooms, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 fresh baguette
  • 365 Everyday Value sour cream, for garnish
  • Fresh tarragon, for garnish
  • Fresh chives, chopped, for garnish (optional)


Preheat oven to 400°F. Toss mushrooms with the olive oil and salt and roast in a baking pan for 12–15 minutes.

Slice the baguette into quarter-inch slices and toast.

Top each slice with mushrooms, sour cream, chopped chives, tarragon, and salt and pepper, to taste.
