How to Make Oat-Crusted Chicken Fingers with Beet Ketchup

Chicken fingers and ketchup: a childhood classic that’s gotten parents of even the pickiest eaters through dinner. We love this nutritionally enhanced version from Main Line Health, with a crispy crust made from oat flour (which you can make by pulverizing rolled oats in the blender or food processor) and sweet, tangy ketchup made with beets. It’s so much better for you than traditional, sugar-laden processed ketchup from a bottle! Using local chicken, local eggs and PA-grown beets is the way to go for maximum flavor, and you can omit or change the amount of each of the spices called for, if you’re sharing the meal with children who prefer simpler preparations. Serve with mac-and-cheese for a crowd-pleasing, nutritionist-approved comfort-food meal.
