Pennsylvania Kitchen at Home: Homemade Mayonnaise with Fidel Gastro and his son Danny

We’re back with another new installment of Pennsylvania Kitchen at Home! Fidel Gastro is back again, this time joined by his son Danny! In his first video for us, Gastro (better known as Marcos Espinoza, owner of Side Project Jerky) made a delicious smoky Mezcal Negroni. In this second video, he’s got a universally useful tip for home kitchen cooking: How to make mayonnaise. Mayo is one of those pantry staples that may be currently sold out in many markets and grocery stores, but that doesn’t mean you have to go without!

If you’ve got any kind of neutral oil, an egg, a clove of garlic and some salt around, you can make mayo! Scratch-match mayo might sound like a thing only fancy chef people make, but as this video proves, it’s really as simple as making any kind of sauce or dressing. Follow along with Gastro and his cute kid to learn this great DIY kitchen hack! Remember, homemade mayo won’t keep for as long as the store-bought kind, so find ways to use it up,  like spreading it on sandwiches, preparing simple tuna or bean salads, enriching other salad dressings, or making picnic favorites, like deviled eggs and macaroni and potato salads. You could also excavate a bag of frozen corn to make this comforting Melty PA Sweet Corn-and-Cheese dip!
